Assam Blossom is our answer to the flower-wrapped cheeses — a semi-hard, aged cow’s milk wheel finished in a coat of dried edible flowers and herbs. Where the Alpine original wears the wild blooms of the mountain meadows, ours is dressed in the blossoms and aromatics of Assam: hibiscus, rose, blue pea and Roselle petals, pressed into the rind as the wheel matures. The flowers perfume the paste from the outside in, and beneath the coat the cheese ripens to something buttery, nutty and gently sweet.
